So fast and simple! I had the urge to pan fry these guys, but they would be fantastic steamed or boiled. 🌈🍃

These were so flavorful and delicious, especially using fresh and seasonal ingredients 👍🍃

For the filling, all you need are wonton wrappers, cream cheese (I used @goveggiefoods cream cheese alternative), seasonings, and mushrooms. 🍃🌟
.
To serve with them, saute 1 pint cherry tomatoes, 1 cup asparagus chopped, and 2-3 minced garlic cloves in 1 T olive oil and about 1/2 cup white wine, with generous salt and pepper. Cook until wine reduces by around 3/4 🍃💃🍃
.
FILLING RECIPE (3 servings): 1/2 tub @goveggiefoods garlic and chive spread, 4 oz. cooked finely chopped mushrooms, 1/4 cup finely chopped kalamata olives, 1/8 teaspoon each kosher salt, pepper, garlic powder + 1/4 teaspoon onion powder + 1/2 teaspoon dried basil. 🍃🌟

It's been awhile since I've posted a tofu stir fry. This one has onion, carrot, and bok choy.
I always cook the tofu first so it can get crispy on all sides. Then I set it aside and start cooking the vegetables. 
I used my usual Asian sauce and spice mix for this plus I added some vegetable broth to achieve more of a general tso type flavor. This was delicious as always! -G

I slept till the kids woke me up this morning, that's something I almost never do. I'm a morning person so I'm usually up no later than 5am.

Saw this at the grocery store and had to snap a pic. Curiosity did NOT get the better of me, and I didn’t pick it up to read it. Of course in my head I said “No, eating meat is actually destroying the planet.” ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Part of me was tempted, because I do think it’s important to understand where the other side is coming from. I think that many of the proponents of the paleo diet actually DO agree that big ag and factory farms are terrible for the environment. Rather they push for grass fed and pasture raised animals, cutting out the need for grains and soy to be grown for animal feed. That’s my guess.⠀⠀⠀⠀⠀⠀⠀⠀⠀

So we at least can agree that factory farming is bad- for animals, for people, and for the environment. But for me, the environment isn’t my driving force for being vegan. It is really about the animals, and the fact that they are not OURS to kill. I just can’t get behind any system that supports killing a living, sentient being with feelings, families, and a will to live, no matter if it lives a great life in a pasture or a terrible life on a factory farm. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I think that many of the proponents of the paleo diet actually DO agree that big ag and factory farms are terrible for the environment. Rather they push for grass fed and pasture raised animals, cutting out the need for grains and soy to be grown for animal feed. That’s my guess.⠀⠀⠀⠀⠀⠀⠀⠀⠀

This observation was confirmed in an Australia study on male omnivores, vegetarians and vegans. Despite having a higher iron intake, a position paper from the Academy of Nutrition and Dietetics in the US reported that vegetarians tend to have lower iron stores as assessed by serum ferritin levels (though still within the normal range), but are not at a greater risk of iron deficiency anaemia (characterised by low haemoglobin and ferritin levels).

-3/4 cup rolled oats
-1 tbsp chia seeds
-1 cup plant-based milk
-1/4 cup brewed coffee
-1 tbsp maple syrup
-1 tbsp nut butter
-optional: 1 serving vegan protein powder (I used @nuzest)

Topped with yogurt & berries these pancakes are an easy, delicious breakfast to fuel your mornings — here’s the recipe:
-3/4 cup flour
-1 tbsp coconut sugar
-1 1/2 tsp matcha powder (I used @naoki_matcha)
-1 tsp baking powder
-1 tbsp nut butter
-1/2 cup applesauce (or 1 mashed banana)
-1/2 cup plant-based milk
In a bowl, mix the nut butter, applesauce, and milk. Sift in the remaining (dry) ingredients, then whisk until combined. Let the batter sit for 5 minutes. Meanwhile, heat a greased frying pan on medium-low heat. Spoon batter onto the pan; once bubbles appear, flip and cook until both sides are golden brown.

It's pasta🍝 🌃 night as it's one of the quickest and easiest meals I find to prepare during the week😁 I used @yvesveggiecuisine original veggie ground round and it's a great replacement if you are looking for a more authentic meat texture to your sauce. I added vegan mozzarella sheds and sliced hot peppers 🌶️ which gave this pasta dish a nice🔥kick!

Ingredients:
1 375g pkg of your favourite pasta 
1 pkg Yves original veggie ground
1 Onion - chopped
3 Garlic cloves - minced
1 jar 650ml Marinara sauce
1-2 tbsps Olive oil

Optional Garnishes: 
Earth Island Vegan Mozzarella flavour shreds
Hot sliced peppers

Cook pasta according to package instructions. 
In a medium to large pan add the olive oil and heat on medium high, add the onions and garlic and saute until tender, about 4 minutes. Add the veggie ground to the pan, breaking it up as you mix it with the onions. Saute for about 4 minutes on medium heat, mixing frequently. Add the marinara sauce to the pan mixture and heat through on low heat, stirring occasionally. Remove from heat once heated through.

Once the pasta is cooked, drain the water, keeping the pasta in the same cooking pot. Add the marinara mixture to the pasta and gently mix everything together and serve, garnishing with the mozzarella flavoured shreds and hot peppers, if using. 
Makes about 5-6 servings.

& let me just say, I am not ashamed to admit it. There’s nothing better than a treat full of nut butter, am I right 🙋🏼‍♀️ now, don’t let these fool you. They may look like my PB crack bars but no.. these are one step above. & I can promise they will make your heart happy. These are my take on the good ol’ tagalong Girl Scout cookies! Made in bar form, becauseeee.. lazy. I just like to keep things easy 😂 They have a baked shortbread crust, a creamy @eatnuttzo peanut butter middle, all topped with @eatingevolved chocolate. I even snuck some @livwell_nutrition vanilla protein in the shortbread to up the protein intake but that’s totally optional! You can just add more almond flour. Good evening! A late post from me for National Peanut Butter Day (I've been in the gym spinning). Tonight we have a simple dinner of tofu satay in a protein peanut butter sauce. Just marinade your tofu in Indonesian flavourings, including a spot of turmeric and whizz together some peanut butter, lime juice, protein powder, tamari and coconut milk for the sauce! ⠀

Breakfast bowl....added oats back in. I find by eliminating most carbs (other than veggies etc) I was eating them at night out of beastly cravings and inability to control my hanger! hopefully this satiates my carb loading lol.

What’s your favourite way to prepare tofu? It’s one of those ingredients that has a bad reputation, and sure, plain tofu doesn’t exactly have a lot of flavour (although, I still kinda like it lol). So, I think that finding a great way to prepare it is key. I like to cook mine in the air fryer for around 5-10 minutes at 200 degrees to give it a nice texture, then add it to frying pan with a sauce made up of 1 tbsp tamari, 2 tbsp apple cider vinegar, 3 tbsp water and 1/2 tbsp cornflour, stirring until the sauce thickens up on a low-medium heat. Today, I served it with some brown rice noodles, asparagus, tomatoes, peas, avocado and spinach (I also added a tahini drizzle as sauce after the photo). Happy Wednesday everyone! 💚

Recipe 👇⠀
Ingredients ~⠀
1 package of dumpling wrapper⠀⠀
1 package of firm tofu, drained and mashed⠀⠀
1 1/2 cups of chopped cabbage⠀⠀
2 carrots, chopped⠀⠀
4 scallions, chopped⠀⠀
1/4 cup of chopped crimini mushrooms⠀⠀
sesame oil, see measurement below⠀⠀
salt and white pepper to taste⠀⠀

How To Make ~⠀
In a heated pan with 1 tsp oil, stir fry tofu until lightly brown, push to the side of the pan. Then add a little more oil, carrot, cabbage, mushrooms, scallions and sauté until cabbage is soft, about 3 mins. Season with salt and white pepper.⠀⠀

Set up your wrapping station with a bowl of water, wrapper, and mixture ready. Moisten side of wrapper with water, and place a dollop of mixture in the middle of your wrapper, pleat to seal. Repeat until you are done with your mixture and then pan fry them.⠀⠀

Pan fry method ~⠀
In a heated pan with 1/2 tsp oil, place dumpling, bottom side down and cook until brownish, add enough boiling water to cover part of the dumpling, cover lid. Turn heat to low-medium and let simmer until all water is absorbed. Serve warm with hoisin and chili sauce. ⠀

Lentil Stew with Creamy Mushrooms & Mashed Potatoes 😋 The perfect hearty meal for the colder months!

Ingredients for Lentil stew⠀
1 cup dry lentils, green or brown (190 g)⠀
1 large onion (chopped)⠀
2 cloves of garlic (minced)⠀
1 tbsp oil (for frying)⠀
3 tbsp white wine (40 ml) (optional)⠀
3 cups vegetable broth (720 ml)⠀
2 cups mushrooms sliced (135 g)
2 tbsp soy sauce (wheat free if GF)⠀
1 tbsp balsamic vinegar⠀
1-2 tsp each of dried parsley, thyme and oregano (use more, if fresh)⠀
A splash of coconut milk canned (for extra creaminess)⠀
1/2 tbsp cornstarch (to thicken)⠀
black pepper and chili flakes to taste⠀
Chopped pickles to taste (optional)⠀

Mashed potatoes⠀
4 medium-sized potatoes (600 g)⠀
1/4 cup coconut milk canned (60 ml)
1/2 tsp nutmeg (or more/less to taste)⠀
black pepper, sea salt to taste⠀
⠀
Instructions⠀
Rinse lentils under running water. I prefer to soak my lentils for about 15 minutes in lukewarm water but this step is optional (discard the water afterwards). Meanwhile, chop your onion, garlic, mushrooms (*see recipe notes). Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat.⠀

Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes.⠀

Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes). In the meantime, peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender). Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and pour this mixture into the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes.
