sweet treats 🍪🍪🍪 these are one of our favourites and so, I am delighted to be able to share my the recipe with everyone!
You can add whatever you like to these wonderful mouthfuls of delight!
125g melted butter
150g light brown sugar
50g caster sugar
150g self raising flour
120g plain flour
1 tsp baking powder
1 tsp vanilla essence (Optional) 1/2 cup of rolled oats, raisins and sultanas or chocolate chips (190g) 🍪🍪🍪
To begin with add melted butter to the light brown and caster sugar and mix together until brown and sticky! Then add the egg and make sure all is well and truly mixed in. Then a splash of vanilla extract. Make sure to sieve the self raising flour, plain flour and baking powder together and then add to the mix. Then add the oats and raisins (or choc chips! Both work equally well!) and then roll into tsp sized balls and space evenly on a baking tray. (Place into preheated oven at 170°) cook for 8 minutes. This will achieve the delicious soft and chewy middle! Nutty Milk Chocolate Cookies...
As the last cookies went down so well with my family, I have tried them with milk chocolate, I think this version is better.
Low FODMAP version below... 100g butter, softened
100g light muscovado sugar
1 tbsp golden syrup
150g self raising flour
100g milk chocolate chunks
60g chopped walnuts
Low FODMAP version:
This quantity of golden syrup is fine. Able to have 1 tsp per serving, there are 3 tsp in a tbsp and the 1 tbsp makes 15 cookies.
Use gluten free self raising flour.
This quantity of milk chocolate is fine, able to have 20g per serving the 100g is used for 15 cookies.
Beat the butter and sugar in a bowl until creamy, then beat in the golden Syrup. Add all the rest of the ingredients and mix together until resembles large breadcrumbs. Then using your fingers bring together. Divide into 15 balls. Place them well apart on a lined, greased baking tray, do not flatten them. Bake in the oven at 180 degrees for about 12 minutes or until pale golden at the edges. Cool on a wire cooling rack.
