Our family loves coleslaw! I grew up making it with cabbage, carrots, onions, white sugar, mayonnaise, white vinegar, and black pepper. Since being married, and working on taking refined sugars out of our diet, I've substituted xylitol and stevia for the sugar. We also started using apple cider vinegar instead of white because it tastes better.
But last weekend when we went to the Carmel/Monterey area, we found a little shop in Carmel, named Trio, where my husband found a FABULOUS pineapple white balsamic vinegar! So of course I had to try making the coleslaw with that, and it was DELICIOUS!!! My husband even said it tastes better than our regular coleslaw! I think we might try adding in a little fresh pineapple for when we do fish tacos this summer. It's not keto, but that's ok! 😉 Right?
