So I smashed up a bunch of blackberries & raspberries in two separate bowls & have been using this for jam on my toast. That’s it - nothing else!!! Just smashed berries, & DANG. So bomb!! 🔥 You can also add some chia seeds for extra omega 3 & fiber if you have some around 🙌🏻

This right here is two slices of toasted seed bread with crunchy pb, zee smashed berries, cinnamon, & a bit of unsweetened coconut flakes for some spazzzzz. Best shnackyyyy or brekkie evaaaaaa!!! Hope you all enjoyed your day 🤗

This was sooooo flippin bomb to have after volunteering on the farm today!!!! I helped herd the cows, did a ton of hoeing, & did a bit of harvesting. So I was BEAT & HUNNNGRY 😜 I can now say I’ve herded cows, & I’m so happy about it. It was so fun & awesome haha!!! 🐮

Cooking with no meat is challenging, at least for me it is.😕 I am not a vegan, but I've started  to cook meatless food since March because of my stepdad's health. His nephrologist told him that he needs to be a vegetarian/vegan if he does not want to have permanent dialysis. Until his GFR, Creatine, and BUN are at normal levels and stay that way, then he may eat meat once in a while, but we will know in about 6 months or so. So, my mom and I decided that we all three will give up meat. 😅
Although that is slightly not true because my mother and I agreed that when we are NOT with my stepdad, we can eat whatever we want. We just do not want to tempt him. (I know I know, we are messed up, right?)😏

It's hard for me to give up meat, because I cook at two different homes. I cook at my parent's on weekends and on weekdays I cook at my boyfriend's place. Now that being said, my boyfriend is a hardcore meat lover, he does not eat much red meat (which is good), but he has told me many time that he cannot and will not give up chicken, turkey, and seafood. So yeah it is hard for me. Yea I know I can find ways to make it work out, but I, too, cannot give up my chicken, turkey, salmon, and tilapia, sorry. 🙄
I actually like my stepdad's new diet because I have learned so much about meat substitutions and all other types of substitutes. I am trying new foods and also experimenting wiht different ingredients and mixing stuff around that actually ends up tasting great!
This month I have made jackfruit burgers, jackfruit tostadas, black bean burgers, and lots of foods that include quiona. couscous and all sorts of beans. I am so excited to make more new food and to share with you all. 🤗

What I have been doing is making a list of all the things I want to make and I am little by little going through the list. I just love to be in the kitchen and cook. Cleaning and cooking is my way of a stress-reliever selfcare for me when I am home. 😉

made these stuffed peppers on my story last night and I’m slightly upset that oscar finished the all of them cause it’s all i want to eat right now 😛 
easy 30 min dinner:

cut bell peppers in half and steam slightly (5 min). meanwhile, sauté zucchini, mushrooms, and ground turkey in avo oil, garlic, s+p, and some @bigtreefarmsbali coconut aminos. stuff peppers with some @miyokoscreamery vegan mozz and pop in the oven at 250 for 5 min then broil for 2 min. topped mine with some fresh parsley, and tahini drizzle 👅

Hi all! Kylie here 👋🏻 This is the first recipe that I’ll be bringing to you & I’m super excited to share just how yummy it was! Pork chops & a chipotle lime sweet potato salad is on the menu. Let’s get started!

[If you don’t have an Instant Pot, I’m gonna need you to rush right to the store and pick one up- you can thank me later.]
The pork chops are simply rubbed with a mixture of paprika, salt, pepper, onion powder & brown sugar. But since we’re doing things a little healthy, whip out that coconut sugar and give it a try in this recipe! Sauté both sides in the IP, then add chicken broth to the pot after deglazing and seal it shut for 7 minutes. Told you you’ll want an IP! Can you say e-a-s-y? ✅ •
Next we have the sweet potato 🍠 concoction. Cube 2 sweet potatoes and add it to a pan with oil & top with some salt. After about 10 minutes, they’ll soften up and you can add the cubed red pepper, cubed red onion, and diced cloves of garlic. You’ll want to add a tad more oil because you’ll notice it will start to dry out at this point. Add in your chopped kale at the end. 🥬
•
At this point, you can eat it as is- YUM- or, you can go one step further and top it with the chipotle lime mixture (1/2 cup of mayo or a cleaner alternative like an avocado/olive oil mayo, 1/2 lime, juiced, and chipotle seasoning to taste.) ✅ 
Mix it all together and ENJOY 😋

Green dinner: green vegetable salad.

Okay, full disclosure -- this salad was a bit labor intensive. But OMG was it amazing. The dressing is rich, and green vegetables pack a nutrient-rich punch. Yum, yum, yum. I'll be making this again.

The recipe is found at www.epicurious.com. However, I had to look up how to actually blanch these vegetables and cut the fennel. I'll try to explain fully what to do below.

Ingredients

For the dressing:

1) 1/4 cup plain fat-free Greek yogurt

2) 1/4 cup buttermilk

3) 2 T chopped tarragon

4) 2 T chopped chives

5) 2 T lemon juice

6) 1 clove garlic, crushed

7) 2 anchovies, finely chopped

8) black pepper

For the salad

1) 200g Brussels sprouts, blanched and sliced

2) 1 bunch asparagus, blanched and sliced

3) 150g green beans, trimmed, blanched and shredded

4) 1 small fennel bulb, trimmed and thinly sliced

5) ricotta salata, shaved and to taste

6) 1/2 cup chervil sprigs

7) 1/3 cup roasted hazelnuts, skins removed and chopped

Directions:

1) To make the green dressing, place all the ingredients in a bowl, and using a hand-held stick blender, blend until smooth.

2) To roast the hazelnuts, bake at 350°F for 10 to 15 minutes. Remove and put them in a dish towel. Rub them with the dish towel to remove skins (the skins don't have to be off completely). Coarsely chop.

3) To blanch the vegetables, bring a large pot of water to a boil. Prepare a bowl of ice water, and put it on the counter next to the stove. Boil the vegetables for 4 minutes, then remove and place in the ice water immediately. I did the vegetables separately.

4) To cut fennel, find a YouTube video that will show you what to do. 😂

5) Place the vegetables in a large bowl and toss to combine. Divide between serving plates and top with the ricotta salata. Drizzle with the dressing and top with the chervil and hazelnuts to serve.

Baby eggplants are up!  Almost perfect germination in less than a week - the secret - heat and humidity.  I placed the covered container with the pellets on top of the heating unit in my HVAC closet. We know that a diet high in animal fats may raise your cholesterol and can raise your risk for cardiovascular disease, and a diet rich in plants 🌱 is known to be cardio-protective. So when it comes to eggs, I think it’s important to look at your egg consumption in the context of your overall diet before demonizing the egg. So fast and simple! I had the urge to pan fry these guys, but they would be fantastic steamed or boiled. 🌈🍃

These were so flavorful and delicious, especially using fresh and seasonal ingredients 👍🍃

For the filling, all you need are wonton wrappers, cream cheese (I used @goveggiefoods cream cheese alternative), seasonings, and mushrooms. 🍃🌟

To serve with them, saute 1 pint cherry tomatoes, 1 cup asparagus chopped, and 2-3 minced garlic cloves in 1 T olive oil and about 1/2 cup white wine, with generous salt and pepper. Cook until wine reduces by around 3/4 🍃💃🍃

FILLING RECIPE (3 servings): 1/2 tub @goveggiefoods garlic and chive spread, 4 oz. cooked finely chopped mushrooms, 1/4 cup finely chopped kalamata olives, 1/8 teaspoon each kosher salt, pepper, garlic powder + 1/4 teaspoon onion powder + 1/2 teaspoon dried basil. 🍃🌟

Salad:

1) 1 cup dry quinoa, rinsed

2) 1 (15 ounce) can black beans, drained and rinsed

3) 1 pint cherry tomatoes, halved

4) 2 bell peppers, cored and diced

5) 1 cup corn kernels

6) 3 green onions, diced

7) diced avocado for serving, optional

Cumin Lime Dressing:

1) 1 cup cilantro

2) 1/2 cup lime juice (approx. 4 limes)

3) 2 garlic cloves

4) 1-2 jalapenos

5) 2 tsp cumin

8) 2 T EVOO

1) In a small saucepan, combine 1 cup rinsed quinoa and 2 cups water. Bring to a boil then reduce to a simmer and cook uncovered for 15 minutes, until all of the water has absorbed. Remove the pot from the heat, cover with a lid and allow to steam for 5 minutes.

2) Meanwhile make the dressing by adding all of the ingredients to a food processor or blender and blending until smooth.

3) Once the quinoa has cooled, divide it evenly between 4 jars. Pour 1/4th the dressing into each jar and gently stir to combine. Next layer the black beans, corn, bell pepper, green onion and tomato on top. Seal with a lid and refrigerate for up to 4 days. When ready to serve, dump the salad out into a bowl and top with diced avocado (optional). These are great to make ahead.

Ingredients

Salad:

1) 1 cup dry quinoa, rinsed

2) 1 (15 ounce) can black beans, drained and rinsed

3) 1 pint cherry tomatoes, halved

4) 2 bell peppers, cored and diced

5) 1 cup corn kernels

6) 3 green onions, diced

7) diced avocado for serving, optional

Cumin Lime Dressing:

1) 1 cup cilantro

2) 1/2 cup lime juice (approx. 4 limes)

3) 2 garlic cloves

4) 1-2 jalapenos

5) 2 tsp cumin

6).1/2 tsp chili powder

7) 1/2 tsp salt

8) 2 T EVOO

Today's porridge was a bit of a random throw-together 😂 I made some vanilla porridge and topped it with some coconut yoghurt mixed with @lifecykel extracts and @bareblends bare berries mix, then topped with a whole heap of frozen berries from my crazy Berry picking trip in December 😂💗

Been away for a week and half travelling with my kids alone. I came back with so much growth and love. There is so much poverty and so much pain in this world that it can be so unbearable. .

I was harshly criticized that I was too emotional when I was much younger. I've come to embrace it. I never grew out of my tears and crying at almost anything sad. Because doesn't this world need MORE of a soft heart and kindness towards each other? If you've spent decades not eating well, not exercising - would you expect change in one day? A week? A month? It would take awhile for your body to adjust and adapt. And so does self love, self worth and self awarenees. It takes practice to shed the negativity. You feel so liberated and so free of not needing to impress others constantly or hiding your true emotions. And you become so much happier that it can only spread to others. 💕💕💕 . .
