For the broccoli rice
4 cups broccoli florets about 2 small crowns
1 tablespoon olive oil
1 garlic clove, minced
1 green onion thinly sliced, white and green parts separated
For the Sauce
¼ cup hoisin sauce
¼ cup water
1 tablespoons cornstarch
1 tablespoon soy sauce
1 tablespoon toasted sesame seed oil
1 teaspoon fresh ginger, minced
For the beef
1 tablespoon olive oil
1 pound flank steak, thinly sliced across the grain
Salt and pepper, to taste

1. To make the riced broccoli, process the broccoli florets in a blender or food processor until you get a riced texture. Heat a pan with olive oil on medium, add the garlic and the white parts of the green onions and fry until fragrant, about 1-2 minutes. Add the riced broccoli to the mixture and toss together until the broccoli slightly softens, about 2-4 minutes. Divide the broccoli between 4 bowls and wipe clean the pan with a paper towel
2. To make the sauce, whisk together the ingredients in a small bowl or a small blender. Set aside.
3. To cook the steak, season with salt and pepper. Then heat the pan used for broccoli rice with olive oil on medium-high. Place the steak strips on the pan in a single layer and cook for 1-2 minutes per side to brown each steak strip. You many need to cook in batches. Add the sauce to the steak and reduce the heat to low. Cook for an additional 3-5 minutes, stirring to coat and allowing the sauce to thicken.
4. Serve the steak on top of the riced broccoli, and garnish with the green parts of the green onions and red pepper flakes.

Vamos a disfrutar del dominguito, no?😬
Aquí os dejo una recetita rica!👇🏽🤤 🔺Madalenas de coco y virutas de chocolate
INGREDIENTES : (6 unid.)
70gr de harina de coco
70gr de harina integral (la que uséis) 
Medio sobre de levadura
1 cucharada de coco rallado
2 huevos
200ml de leche (la que uséis) 
80gr de claras
1cucharada de aceite de oliva v. e
Edulcorante al gusto

ELABORACIÓN :
Poner por un lado las harinas mezcladas con la levadura y por otro lado batir los huevos junto con las claras, añadir la leche, el aceite y el edulcorante al gusto. 
Juntamos con las harinas y procesamos bien con la batidora hasta conseguir una mezcla homogénea. 
En recipientes de madalenas (yo uso los de aluminio individuales) lo engrasamos previamente y vertemos la mezcla en él. 
Introducimos en el horno, previamente precalentado, unos 25 min a 220°. Una vez que estén listas y frías, desmoldar y pintar con crema de frutos secos o mermelada light y añadir por encima las virutas de chocolate o lo que deseéis.

The cold from hell only made me feel worse, a baby with a cold who doesn't know what to do with themselves, then the husband comes home from the supermarket with cookies 🤦 Never mind. Draw a line and start again with breakfast. This in our house has been named 'Christmas Porridge' by the 7 year old. Oats, cinnamon, maple syrup, dried apricots and cranberries with a mug of peppermint tea. Yum yum yum 🍵💪 ______________

I started foamrolling since I had an injury to my knees. After this happened I foamroll before my workout on the days I do weight training. Foamrolling before your workout helps to improve your mobility so you can get the best out of your workout.

Two times a week I also use the foam roller in to my stretching routines. This to reduce scar tissue of my muscles

When you start to foamrolling it can hurt (a lot) in the beginning😫. After a few weeks your muscles will be looser and it will feel more comfortable! .
For some extra motivation; the mainly benefits for take in foamrolling to your workout routine are:

🔸improved movements
🔸better range of motion

Totally freestyle...a friend ask if beer can chicken was any good...got me thinking, we all know it is, but let's take it to new heights....Thai style paste out of lemongrass, ginger, garlic, chilli, Basil,coriander root, fish and soy sauces. Rubbed on the skin and stuffed under the skin, cumin and tumeric added to the coconut cream and the chooken stuck on top, with pumpkin, cauliflower and lemon in the pan in the bbq....but where too from here 🤔I've got an idea....stay tuned

- 🍐 Adicionar delicadamente as claras em castelo a massa;
- 🍐 Por fim acrescentar a pêra em pedaços pequenos, o fermento e a amêndoa palitada;
- 🍐 Colocar a massa numa forma de silicone e levar ao forno por 30/35 min;
- 🍐(podem colocar por cima da massa ainda fatias de pêras regadas com mel que fica uma delicia 🤤)

If you haven’t tried broccoli slaw you’re missing out!. I dressed it up with a nutrient-dense dressing I made with a handful of cilantro, garlic, spinach, tahini, and lemon. As always, feel free to experiment and substitute out any of the ingredients to suit your tastebuds. You can use this dressing with salads, with noodles, or use as a dip for vegetables. Tahini has such a nice kick and at 0 net carbs, it’s a great alternative to using oil for dressings.

To make a large batch of the dressing/pesto:
.
1.In a small food processor, I threw in 1 handful of fresh cilantro, 1 cup of baby spinach, 2 cloves fresh garlic, 1 tablespoon olive oil, 1/4 onion, juice of 1.5 lemons.
.
2.Pulsed all of the above together, then added 2 tablespoons of tahini.
.
3.Pulse and pureed everything above and added sea salt, pepper, and a little ginger, then ran the food processor again.
.
4.At this point, I did a quick taste of the sauce to see if I wanted to season with more salt, add more lemon juice, or add more herbs. This all depends on your taste buds. I mixed some of it with the slaw and put the rest in the fridge.
.
To make the shrimp:
.
1.I seasoned a handful of large shrimp with sea salt, some lemon pepper, smoked paprika, and some red chili flakes.
.
2.I put the shrimp and sliced mushrooms in a pan on medium heat with 1 tablespoon coconut oil and cooked on each side until pink (less than 5 mins total).

Most of the components were prepped over the weekend and thrown together, with a few other additions, to make this salad. And none of them took any real amount of time to do. If you are thoughtful about prepping, assembling a salad like this is easy to do and takes a lot of guesswork out of ‘what’s for lunch’.... Boiling eggs, roasting asparagus and tomatoes and making rice was the ‘ahead of time’ stuff that was done. Cutting an avo, slicing some feta and opening a can of chick peas was the ‘real time’ stuff....
Easy Peasy and the reward is a killer salad 👌

Feeling those spring vibes today and it gave me the urge to do some outdoor grilling. We made these chicken, feta and spinach burgers and some grass fed beef burgers for dinner with grilled zucchini and tomato, black bean and corn salad with some avocado on the side. We also made some grilled corn on the cob and a tossed salad for extra options as we all have our preferences. It was a delicious dinner that really hit the spot. Recipes below:

🍔🌿🧀 To make the chicken burger combine 1 pound of ground chicken with 1 packed cup of chopped cooked spinach, 2/3 cup of crumbled feta, 1/2 cup chopped fresh dill, 1/2 cup fresh chopped parsley, 1/2 cup chopped scallions, salt and pepper to taste. Preheat grill pan on medium high heat or prepare a grill. Combine all ingredients in a large bowl with wet hands. Form the burgers into 6 patties. Grill on each side for 5-6 minutes until golden and cooked throughout.

🍅🌽🌿 Tomato, Corn & Black Bean Salad: Add 2 cups of drained and rinsed canned black beans, 2 cups corn kernels, (thawed frozen or canned) 1 1/2 cups sliced grape tomatoes to a large bowl. Add the juice of a lime, 2 to 3 tablespoons olive oil, salt and pepper to taste. Toss with a handful of fresh chopped cilantro.

Since I don’t like store-bought cakes that are always high in sugar, dairies, saturated fats and calories, I created this recipe for my own birthday cake 😆 with fluffy chai cake layers, blackberry compote and lots of rose petals @suncorefoods 🌸

Blackberry chai  layer cake 
Vegan, refined sugar free, soy free
__
Ingredients 
makes 3 x 15cm/6"cakes
420g flour 
3 tsp baking powder
1 tsp baking soda 
1 Tbsp cinnamon
1 1/2 tsp. cardamom
1 tsp. ground ginger
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
380 ml unsweetened almond milk
1 tsp vanilla bean paste 
2 tsp apple cider vinegar 
270g golden caster sugar
130 g coconut oil, softened 
__
Method: 
1. Grease and flour three 15cm/6-inch round cake pans.
2. In a small bowl, pour in the milk and apple cider vinegar. Set aside for 10 minutes.
3. In a medium bowl, whisk together the flour, cinnamon, cardamom, baking powder, baking soda, ginger, nutmeg, cloves, and salt.
4. In a bowl of a food processor, add sugar and softened coconut oil.  Beat until fluffy, 1 minute.  Add the milk and vanilla; beat on low speed until well-incorporated.
5. Pour the dry ingredients into the wet ingredients and fold gently until just combined.  Do not over-mix.  Divide the batter among the 3 prepared cake pans.  Bake at 180C  for 25 minutes or until a skewer comes out clean.  The sponges will be lightly browned and beginning to pull away from the sides.
6. Remove and cool 10 minutes before turning the cakes onto a wire rack to cool completely.
