SOOO I’m low key obsessed with Thai food. Like, I could easily eat it 2x a day 7 days a week for the rest of my life. I👏🏼Love👏🏼 It👏🏼.
That being said, I’ve literally made this salad the past 5 days in a row & will probably make it the next 5 days too. 🤷🏼‍♀️
DO IT (you’ll be happy you did):
-spinach
-mint
-cabbage coleslaw mix from Trader Joe’s
-soba noodles (I used kelp noodles since it’s all I had)
-bell pepper
-edamame -(optional: add protein of your choice)
-spicy peanut Thai dressing from TJ’s
-sesame oil
**combine all ingredients in salad bowl, dress with sesame oil & peanut dressing, top with chopped peanuts. Enjoy!

It’s been Spring Break this week, so I had another Lean & Green meal while out with the family! This time we went to Dave & Busters during lunch and I was so excited to see they offered Zucchini Noodles!!🙌🏾 I should have asked for the sauce on the side or no sauce at all, but oh well.🤷‍♀️ It was good!😋

I realized something today as I was searching for an older photo of myself....I outright avoided the camera!!!! I have very few pictures of me in front of the camera with my family...and that's so sad! 😥

HEALTH
CONFIDENCE
and HAPPINESS!

The physical transformation between the two is obvious, but what may not be so obvious is the way I felt. I needed Diet Coke or Dr Pepper to get through a day, my stomach problems were constant, and I battled anxiety and depression.

Today, I just feel GOOD. Like really good! My body is happier and healthier which makes everything more balanced. I don't rely on soda to get me through the day, I can physically workout for long periods of time and my body is fueled by healthy choices!

And you know what got me here...a balanced healthy diet and exercise. That's it. No gimmicks, no quick fixes. Back to the basics! .

** Blueberry Pancakes! **
It's the freakin weekend and in my opinion that calls for pancakes! 😍🥞🙌
These beauties are low carb, keto friendly, and loaded with moisture and taste.
Try them out on your loved ones orrrr eat them all yourself 😜

Recipe 👇

1/2 cup almond flour
2 tbsp coconut flour
1 tsp cinnamon
1/2 tsp baking powder
1-2 tbsp granulated stevia
3 large eggs
1/4 cup milk of choice
1/4 cup blueberries Fresh or frozen thawed 
Instructions

In a blender, combine all of your ingredients except your blueberries. Mix for 2-3 minutes until a smooth, thick batter is formed. 
Pour your batter into a large mixing bowl and stir through the blueberries. Allow the batter to sit for 5-10 minutes until it thickens. If the batter is too thick, add a little milk of choice and whisk in.

Preheat a large non-stick pan over low-medium heat. Ensure the pan is lightly greased. Once hot, Pour 1/4 cup portions of the batter onto the pan and cover immediately with a lid. Allow pancakes to cook for 2-3 minutes (until the edges go golden) before flipping and repeating. 
Once cooked, serve immediately, or cool completely before refrigerating/freezing for later. Serve with greek yoghurt and extra blueberries.

This little guy ran his first #spartankids race this past weekend. He loved it and did great!! It was such a nice reminder that I don’t just want my lines to stay bright for me, but also for my family. I make awful and selfish choices when I am not clean from sugar and flour. A lot of those choices affect my family so #brightlines continue to be very very important. The ☀️ is finally shining and temperatures have risen....for now😉! It is starting to feel like spring and I love it! Warmer temperatures and sunshine get me in the mood for healthier food! 
These salt n vinegar cucumbers are screaming summer!! I could easily eat the whole bowl. All I did was wash and peel two cucumbers. Placed them in a bowl with a lid and added 1/4 cup vinegar, a handful of ice cubes and sea salt to taste. Placed the lid on and shook to mix all well! That’s it!! They are super tasty 😋

These protein pancakes are delicious, super filling and guilt free! Who said healthy can’t still taste great.... not me 😝 These are the perfect way to start my weekend!

Recipe👇🏼
1.5 cups wholegrain oats
3 scoops Arbonne vanilla protein
1 egg (can substitute for a chia egg) 
3/4 cup almond milk (adjust to your liking)
1 tsp baking powder
Pinch of salt

It’s Friday! I like Friday the most but I’m feeling exhausted, sleepy and tired today. 😓😴

So, Friday is meant to be a bit slack for me in her lunchbox (usually the case). I prepped one of her favourites - pork floss (but I added cucumber in which she prefer not seeing any green! 😂) and the mean mum in me added cherry tomatoes and #homegrown basil leaf (she hates it!) as the side! But I also added baby mozzarella balls which she likes.

Super easy just steamed the Rice Noodle Rolls (aka Chee Cheong Fun), fried the #homemade dumplings and stuff, make some homemade sweet sauce, add toasted sesame seeds and fried onions, drizzle bit sesame oil and chop chop chop the fruits - just make sure there’s splash of orange colour in it as Orange is the official colour for Harmony Day.

I spotted this Yoconut Natural Coconut Yoghurt Alternative at @aldiaustralia last week and was keen to see what the buzz was about as I’d heard it’s a fan favourite amongst Aldi lovers!

Safe to say I’m converted! I love coconut, and this delicious yoghurt alternative is so thick and creamy, and I thought it was quite similar to Greek yogurt which I love anyway. If you like a sweeter yoghurt be sure to drizzle it with honey, it’s 👌🏼 This is also dairy- free, gluten-free, vegetarian and vegan-friendly so I can see why its so popular! I love that Aldi offers healthier, wholesome alternative products for people with allergies or special dietary requirements. It would also make a perfect replacement for thickened cream, I plan on using some in a curry this weekend 😋 .

So for the curry paste I blended up a red chilly, a thumbnail sized chunk of ginger, a stem of lemongrass, 5 cloves of garlic, a bunch of coriander, 1 red onion, a teaspoon of ground cumin and a teaspoon of coriander! And then shallow fried this paste in some @frylighthq & added the tenderstem broccoli and mushroom & let it cook for about 5 mins before adding a can of low fat @bluedragonuk coconut milk, a cup of veg stock, some salt & pepper & then added the babycorn & about 15 minutes later I added the pak choi and let it cook for about 5 more mins!

I don’t always have goodies like this in our home, because when I do, I’ll eat half the batch in a day—no joke.

You could even create a similar recipe with your favourite plant-based protein to make it all vegan! When you come to ditch the fish, why not try roasted veggies/ organic tofu/ or tempeh with a garlic-vegan-butter-sauce? Mmmm 😋

Trash 🗑 the #toasttuesday I’m into #truffletuesday 🍫 Not just any truffle, but SALTED CHOCOLATE CRUNCH TRUFFLES!
Method to my madness...👇
Mix 1 cup oats, 1/4 cup unsweetened shredded coconut, 3 Tbsp brown rice crisps, 2 Tbsp cacao powder, 1/2 cup almond butter and 3 Tbsp agave. Roll into balls and place into freezer. Once hardened, coat in dark chocolate and sprinkle with pink salt. Store in the fridge.

2.5 lbs. @Sizzlefishfit Wild Atlantic Cod Fillets⠀
1 Large Russet Potato (cut into thick fries)⠀
2 Eggs (beaten)⠀
1 Lemon (quartered into wedges)⠀
2 C. Frozen Peas⠀
5 C. Gluten Free Panko Breadcrumbs (dry toasted in oven until golden brown)⠀
1 C. Gluten Free All-purpose Flour⠀

This recipe is a family favorite! 🍴
#lindasasianlettucewraps 🍃Asian Lettuce Wraps🍃
#
•1 Tbsp avocado oil
•4 large cloves garlic, minced
•1 Tbsp fresh ginger, minced (I use a zester!) or 2 tsp ground ginger
•1 1/2 lbs ground chicken (or turkey or beef)
•1 1/2 - 2 c minced/riced veggies (cauli, broccoli, mushrooms, peppers etc.)
•1/2 c shredded carrots
•1/2 c diced green onion
•1/2 tsp sea salt (or more to taste)
•1/4 c coconut aminos (or soy sauce)#
•2 tsp sesame oil
• juice and zest of 1-2 limes
• 2 Tbsp sirracha hot sauce #
• handful chopped, fresh cilantro
•1 head of iceberg or butter lettuce
•purple cabbage for garnish (opt.) ~~~~~~~~~~~~~~~~~~~~~~~~~#

Heat oil in a large skillet on medium heat. Add the garlic and ginger and sauté for just a minute until fragrant, then add meat and salt. Turn heat up to med/high and cook through and stir until meat is nearly done. Add the rest of the ingredients, except the cilantro, lime juice and zest. Mix and cook on med heat until the carrots are tender, and meat is cooked through. Remove from heat and toss in the cilantro, lime juice and lime zest. Serve in lettuce cups and top with a Asian sauce and/or more sirracha.

For the sauce, I mix equal parts of rice vinegar, coconut aminos (soy sauce), and then a little sesame oil, sirracha, fresh ginger and green onion.

THREE things to get over gym intimidation ⁣

Are you scared to go to the gym because you are not sure how to perform some exercises? ⁣
⁣
I have been there! I so badly wanted to know what I was doing in the weight room, I would stare at the girls who knew what they were doing but couldn’t get myself to go and do it. ⁣
⁣
I was terrified of people watching me or tell me I was doing it wrong. And when I did try I felt so self conscious and half asked my workout ⁣
⁣
So, how to get over this intimidation? ⁣
⁣
My THREE tips that helped me were⁣
⁣
1️⃣Go with a friend your first few times, you will feel SO MUCH more comfortable and they can help you with your performance ⁣
⁣
2️⃣Just START! Yes you will feel out of place, you will feel awkward but you have to push yourself out of your comfort zone. ⁣
⁣
3️⃣Go in with a PLAN! Once I started following a written out routine, I felt more comfortable because I had set exercises I knew I needed to do. Instead of looking around and thinking of one ⁣

Remember, if you want something you never have had before, you need to do something you have never done.⁣
⁣
Each day that you go it will get easier, you will feel more comfortable I PROMISE⁣
