Thai curry tonightttt, I know no goodness bowl or pasta ...??? Haven’t been hacked promise it’s me❣️
So for the curry paste I blended up a red chilly, a thumbnail sized chunk of ginger, a stem of lemongrass, 5 cloves of garlic, a bunch of coriander, 1 red onion, a teaspoon of ground cumin and a teaspoon of coriander! And then shallow fried this paste in some @frylighthq & added the tenderstem broccoli and mushroom & let it cook for about 5 mins before adding a can of low fat @bluedragonuk coconut milk, a cup of veg stock, some salt & pepper & then added the babycorn & about 15 minutes later I added the pak choi and let it cook for about 5 more mins!
Served with some crispy kale, spring onion, red chilly, cashews, peanuts, coriander and a squeeeeeze of lemon 🍋🥰
Soo nice & just what I needed to nurse me back to wellness (hopefully)
