Crockpot Mexican Chicken Bowls🍅 This Crockpot Mexican Chicken Bowl recipe couldn't be simpler! On top of simplicity its SUPER SATISFYING too! You can really add or subtract any ingredients to your personal preference...allow everyone to top their own bowls at dinnertime, OR divide these up into food prep containers for your work-week lunches. Enjoy! ❤Rachel 
makes about 5 servings

Ingredients:
1.5 lbs boneless, skinless chicken breasts 
1 large lime, juiced
1 tsp ground cumin 
1 tsp smoked paprika
sea salt and fresh ground black pepper, to taste (I used 1/4 teaspoon of each)
15 oz jar crushed tomatoes with juice 
15 oz black beans, rinsed and drained
1.5 cups frozen, organic corn
1 cup chicken bone broth
4 oz diced green chiles
1 small yellow onion, diced
2 cloves fresh garlic, minced

Topping ideas:
a small bunch of chopped cilantro leaves, to garnish
2 ripe avocados, diced to garnish
2-3 jalapenos, sliced
2 green onions, sliced 
shredded cheese
plain Greek yogurt 
Instructions:
Add all the ingredients except for the toppings to the bowl of your crockpot.

Cook on LOW for 6-8 hours or on HIGH for 4-6 hours.

Once the chicken is cooked, remove from the slow cooker and shred it using forks, or a kitchenaid mixer. 
Return chicken to the slow cooker, gently stir everything together, and cook for an additional 30 minutes.

Divide the Mexican chicken among 4-5 bowls and top with diced avocado, jalapenos, green onions, shredded cheese, Greek yogurt and lots of cilantro. Enjoy!

Simple & Quick Lunch!
Toss some spring mix with dressing of your choice (I did walnut raspberry vinaigrette, my fav)  in a bowl, throw some berries (strawberries) and nuts (raw almonds) on, add some protein (honey roasted turkey) and add some starchy veggies (I did potato salad with eggs, extra protein and fat!), top with some fresh herbs (parsley and chives from my garden), and you have yoself a healthy and nourishing lunch in less than 5 minutes.
My version here has about 500 kcal and is almost equal parts carbs/fat/protein. Easily tweaked to fit your macros.
It is recommended to eat 2 heaping plates of leafy greens, and drink a cup of bone broth daily to promote a healthy gut. Your immune system sits in your gut. A lot of your mental functions are relying on the micro nutrients contained in fresh, whole food.
If you’re feeling cranky, moody, weak, sluggish, bloated, sleep badly, get sick often,... EAT MORE WHILE FOODS. I promise you, fixing your gut will fix 90% of your health problems. Blueberry oatmeal muffins 💙 I saw these on @choosing_balance and decided to make them, since they looked so good! I just substituted flaxseed meal instead of protein powder. They’re quick to make, great for meal prepped breakfasts, and are plant-based 😊

Here’s her recipe: (I halved it and it made 7) Combine 3 cups rolled oats, 1 tbsp cinnamon, tsp baking powder, 2 cups unsweetened almond milk, 1/4 cup coconut sugar (I used @bobsredmill) and 1/2 cup blueberries (I used frozen), and 4 tbsp flaxseed meal (from @traderjoes). Mix all together and cook in muffin tins greased with coconut oil for 10-23 minutes at 350 F. Enjoy ✨

Hello 👋 how’s your afternoon been? I hope you’ve had a good one! Today’s dinner was similar to yesterday except I’m having baby carrots with it instead of tomatoes 🍅. Pesto pasta 180g cooled with 15g if pesto mixed in, 15g of feta cheese 🧀 a boiled egg 🥚  A few butter beans, alol topped with some  bbq sauce 🍖👌 I also had some parsnip(100g) with 80g of mixed veg🥕😋 and a glass of water 💦  has a okayish day , body image has been good, mood had been good although on a night  just before bed I seem to be bloating  really badly especially when I’ve drunk my milk😩 does anyone know what the cause is and if it could be to do with soya milk ? As since I’ve been having soya milk these last couple of days it’s been a lot worse than usual🤔but apart from that I’m good.  Also stay tuned later as I have a massive challenge for Nightsnack! I’ve been wanting to try them for ages now but have been too scared to! Tonight i refuse to have a cereal bar, I refuse to have a light yoghurt. Favorite pre-workout combo for lunch again today🏃🏼‍♀️. I like to eat similar things before each workout because I know what foods settle well in my stomach and which foods don’t🤗! Today I roasted a sweet potato🍠 with some cinnamon and a variety of veggies🥦. Then I warmed up some tempeh in a frying pan🔥 and had a side of red pepper mustard (which my mom sends from home🏡)

What does strength mean to me?

For me it’s all within the mind... MENTAL STRENGTH! 
I think it’s all about being able to learn from your mistakes and be able to use those mistakes to make you better at dealing with other difficulties that arise because you have gained that mental strength! 
For me mental strength isn’t resilience because for me it’s not being able to cope with everything, I think it’s all about the hard times because with those hard times you fight hard to make it through and with that fighting you learn skills to get through this hard patch and can use that to get through other things because you have gained that strength! 
This is very similar to physical strength because if you think about it if you squat it’s a difficult situation to get back up but through getting back up from the squat you learn you can do that and you gain strength!!! For me mental strength has kept me going through hard times, it hasn’t meant that I have managed all the challenges thrown at me in the best way it just means that I have learnt from all these hard things to get me to where I am now and to help me with my recovery but also my everyday life! 
This is why I love the brand @bejuststrong because they are all about women striving to be stronger and this can be mental and physical and actually I think everyday we should aim to build our mental strength by thinking how could I improve how I acted today to make me feel better!

First post and breakfast of 2019 is these HEALTHY PROTEIN PANCAKES! 🥞🥳 Who said your 2019’s fitness resolutions have to boring?! These chocolate pancakes are fab for those with a sweet-tooth and are under 600 calories and have around 30G of protein without powder! They kept me full for a good 5/6 hours!! There super easy and lazy student friendly, taking me only 10 minutes to make! All you need to do is; mash up two bananas and whisk them together with eggs and oats (use a blender for smoother consistency). Add your choice of flavour, I used cocoa powder and vanilla essence, and then used the 1 calorie FryLight spray to fry them! -

Chicken Stroganoff is mainly a Russian dish which has become popular around the world.
Myself being a big fan of continental food tried this in the newly opened cafe at Purna Das Road.

This cafe has a nice,cosy and  spaceous interior.There are bean bags too which add to its quirky outlook.The service is prompt and the staffs are courteous as well.

Now coming to the food part.
The chicken was juicy and the sauce was done with absolute perfection.It tasted amazing.The herbed rice was tasty as well.
The quantity is sufficient for one person only.

Blackened shrimp with lots of veggies 😍 Found some leftover blackened shrimp in my freezer and paired it with easy sautéed zucchini (ready in 7-8 mins), avocado (I know I know I couldn’t help myself😅🤷🏼‍♀️), and tomatoes 👌🏻 Totally feeling like summer with this meal 😍 -

So ready to say goodbye to soups and winter dishes for summery bowls like this 💯 Maybe a little early but you know, a girl can dream 😜 I love finding protein sources (shrimp, chicken, burgers) already made in the freezer and putting them in the cast iron to reheat them 👌🏻 I normally will put them in the fridge the night before to thaw them out but you can microwave/boil to thaw or run under hot water. Just add a tiny bit of oil to the skillet so it doesn’t stick and reheat the shrimp for about 5 minutes- so easy and it’s already seasoned so no mess 🙌🏻 While I’m eating shrimp, Manning is eating socks 😅 We think she ate a sock or two and have been dealing with that issue 💩 this evening haha. Luckily she’s fine but has lost her playing with socks privileges 😂 I’m a little lost without the Bachelor tonight so I’m thinking a long walk with the pups is in order this evening 🐶💕 -

Made with pork belly+ cilantro + green peppers 😋😋
Purchased the actual buns at Grand Asia Market, and cooked the pork belly for three hours! It turned out pretty good! 😍

{NEW} Healthy Sweet Potato Fries + Ranch Dip 🍠🍟 makes about 2-3 servings

Ingredients:
2 large sweet potatoes or yams
1.5 Tbsps avocado oil, or olive oil
1 Tbsp dried oregano
1/2 tsp granulated garlic 
sea salt and fresh ground black pepper, to your taste

Healthier Ranch Dip:
2/3 cup plain Greek yogurt
1/2 Tbsp wholegrain mustard (dijon)
1/2 tsp apple cider vinegar
1 Tbsp chopped chives
2 Tbsp fine diced sweet onion
1 freshgarlic clove, minced or pressed
a pinch of sea salt and pepper, or to taste

Instructions: 
Preheat the oven to 400 degrees f. and line a large baking sheet (or two) with parchment paper or silicone baking mats.

Cut the sweet potatoes into 1/2 inch fries as shown and place them into a large bowl.

Sprinkle fries with sea salt, pepper, oregano, garlic, and drizzle with oil. 
Toss well to get all of your fries nicely coated.

Arrange in a single layer, with some space in between (so they can crisp up), on the baking sheets and bake for 20 to 25 minutes, flipping once during roasting time.

Meanwhile, prepare your healthy Ranch dip. In a small bowl, add all ranch ingredients and whisk to combine.

Прекрасно!!!
Я высыпаюсь, успеваю сделать все дела по дому, поработать на себя, 3 раза в неделю позаниматься спортом, почитать книгу, посмотреть сериал, куда-то сходить🙂🙂.
Но сменить образ жизни, уйти с работы, было очень тяжело и страшно. До сих пор мне не по себе от того, что я не работаю, сказывается многолетние внушение, что надо работать.
Но я ни капли не жалею и всем довольна. Удаленная работа - это мечта)))
