Ingredients
3 – 6 skinless, boneless chicken thighs
1 pound (450g) green beans, trimmed
3 tablespoons butter, divided or (ghee for paleo diet)
4 garlic cloves, minced
1 teaspoon paprika
1 teaspoon onion powder
Salt and fresh cracked pepper
Juice of 1/2 lemon + lemon slices, for garnish
1/2 cup (125ml) chicken stock
1 tablespoon hot sauce (we used Sriracha)
Crushed red chili pepper flakes, optional
1/2 cup fresh chopped parsley
Directions
1. In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with the spice mixture. Set aside while you prepare green beans.

2. Arrange green beans in a microwave-safe dish with 1/2 cup (125ml) water. Cook in the microwave for 8-10 minutes, until almost done but still crisp.

3. Melt 2 tablespoons butter in a large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in the skillet. Cook for 5-6 minutes then flip and cook another 5-6 minutes, until cooked through and a cooking thermometer displays 165°F (75°C). If chicken browns too quickly, lower the heat. Adjust timing depending on the thickness. Transfer chicken to a plate and set aside.

4. In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, garlic, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Deglaze with lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened.

5. Add cooked chicken thighs back to the pan and reheat quickly. Adjust seasoning with pepper and serve the lemon garlic butter chicken thighs immediately, garnished with more crushed chili pepper, fresh parsley, and a slice of lemon if you like. Enjoy!

Didn’t take a picture of breakfast. But just had plain porridge, forgot my banana! Lunch was a tuna salad. Dinner was a beef casserole with dumplings! Dumplings are now out of bounds the packet has been used and I refuse to buy another one coz I know they’re naughty! But so nice! Crispy Tempeh Vegan Tenders!
In a pan, combine crumbled flax tempeh, tamari, and 1 cup water and bring to a boil. Cover and cook on high for 6-8 mins. Drain and transfer to a bowl.  Add finely chopped shallots, onion powder, garlic, sweet smoked paprika, and your flax seed egg (flaxseed meal/water) to the tempeh bowl. Season with salt and pepper and mash until well combined. Form into 2 inch balls and flatten them!
Taking one tempeh tender at a time, dip it into the flax “egg” (again: flaxseed meal/water) and press into Panko bread crumbs. Do until all tenders are coated. 
Add tenders to a heated, oiled pan and cook about 5 mins a side and season with salt and pepper. 
Green Beans: 
Warm oil in a pan and stir in chopped shallots, salt, pepper, and cook until softened. (5 mins-ish) or for however you like your green beans-hard/soft. Stir in 1 tbsp lemon juice and cook until mostly absorbed. Remove from heat and season with lemon zest, salt and pepper. Top with vegan Parmesan cheese!
Serve tenders with BBQ sauce: (tomato paste, apple cider vinegar, maple syrup, molasses, vegan Worcestershire, fresh garlic, kosher salt, black pepper) or your favorite bbq sauce!

I love going to my local International grocery and buying up all the different veggies and experimenting in my kitchen. On my recent travels to Thailand, I saw street vendors using Chinese long beans or long beans as an ingredient in fried rice and soups. So when I saw this veggie at my grocery store, I knew that I could make a spectacular side dish using these beans. Chinese long beans are very similar to green beans and can be made the same way. There is a bit of a textural difference but other than that, you can experiment to your heart’s delight!

Chinese Long Beans with Fish Sauce

4 cups of long beans, cut 3 inches long

1 teaspoon garlic, minced

1 cup green onions, chopped

2-4 chili peppers, chopped

3 tablespoons fish sauce

3 tablespoons oil

1/4 cup of water

In a hot skillet heat oil and add garlic until browned. Add in long beans with 1/4 cup of water and steam for 2-3 minutes over medium-low heat. 3 – 6 skinless, boneless chicken thighs
1 pound (450g) green beans, trimmed
3 tablespoons butter, divided or (ghee for paleo diet)
4 garlic cloves, minced
1 teaspoon paprika
1 teaspoon onion powder
Salt and fresh cracked pepper
Juice of 1/2 lemon + lemon slices, for garnish
1/2 cup (125ml) chicken stock
1 tablespoon hot sauce (we used Sriracha)
Crushed red chili pepper flakes, optional
1/2 cup fresh chopped parsley
Directions
1. In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with the spice mixture. Set aside while you prepare green beans.

2. Arrange green beans in a microwave-safe dish with 1/2 cup (125ml) water. Cook in the microwave for 8-10 minutes, until almost done but still crisp.

3. Melt 2 tablespoons butter in a large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in the skillet. Cook for 5-6 minutes then flip and cook another 5-6 minutes, until cooked through and a cooking thermometer displays 165°F (75°C). If chicken browns too quickly, lower the heat. Adjust timing depending on the thickness. Transfer chicken to a plate and set aside.

4. In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, garlic, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Deglaze with lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened.

5. Add cooked chicken thighs back to the pan and reheat quickly. Adjust seasoning with pepper and serve the lemon garlic butter chicken thighs immediately, garnished with more crushed chili pepper, fresh parsley, and a slice of lemon if you like. Enjoy!
