Red lentil soup (Adas) with shredded chicken for me!! A delicious, creamy, and aromatic dish that not only satisfies my tastebuds, but also my body. Packed with flavor and nutrients, it leaves my body both happy and healthy.
1 cup of split red lentils
5-6 cups of chicken broth
1 large of 2 medium chicken breast
2 large carrots
2 large celery
1 big onion
6 cloves of garlic
About 2 lemons
Soak chicken breast in vinegar and cool water for 10-15 min. Pat dry and season both sides with salt, pepper, garlic powder, paprika, mixed Arabic spices, and dried mint. In an instant pot, sautés both sides of the the chicken to achieve a beautiful crust. Dice the carrots, celery, onion, and garlic and put in the instant pot with chicken. Give a quick mix. Add you lentils and chicken broth. Pressure cook for 20 min. Next, take chicken breast out and shredded and set aside. Re-season with all of the listed spices to taste. Get a hand blender, or pour into a regular blender, and blend soup until nice and creamy texture. Put shredded chicken back into pot and squeeze 1 1/2 to 2 lemons. Eat and enjoy!
