CHICKEN NOODLE SOUP 🍜
This soup is like magic medicine for anyone who’s sick like I am! This all cost about £10 to make so it’s a really cheap recipe with loads of soup left over! Here’s the recipe!
•noodles (I used egg noodles but rice noodles would work well too!)
•Bok choy- you can find this at your local super market but spinach also works to add some crunch and freshness
•a bulb of garlic
•2 good lengths of ginger (about the size of your finger)
•a bunch of coriander
•a cup of soy sauce
•a bag of sugar snap peas
For the master stock-
•into a large saucepan, roughly chop one length of ginger (skin left on) along with one of the chillies, the bulb of garlic chopped in half, the tops and tails of the onions and the stalks of the coriander
•add in the chicken along with the soy sauce and enough water to cover everything up
•cover with a lid and bring it up to the boil. Then reduce heat and simmer for about an hour
•take out chicken with tongs and strain stock
•soak noodles in boiled water for 5 mins or until soft
•leave chicken to cool and pick the meat off the bones and add to stock
•add strained noodles to stock along with finely chopped ginger, chilli, spring onion, bok choy and peas and serve!
This is a really fresh and easy recipe guys and it makes you feel so happy and healthy inside!! Definitely try this one out and feel free to add or take away anything you like!
