Welcoming spring with this asparagus risotto. Creamy, delicious and so easy to make

2 cups trimmed and chopped asparagus
1/2 cup white wine
3-4 cups vegetable broth
1 cup arborio rice
3-4 chopped garlic cloves
2 tbsp butter
1 shallot chopped
Salt and pepper
- In a large pan, add butter and let it melt
- Add garlic and shallots and cook for a minute on medium heat
- Add rice and white wine and stir for a minute and add asparagus
- Add broth 1/2 cup at a time and let the rice cook until the rice is al dente
- Season with salt and pepper and scoop into a bowl to serve
- I garnished with parsley and nutritional yeast

Recipe for the coffee oatmeal:

-1 tbsp chia seeds
-1 cup plant-based milk
-1/4 cup brewed coffee
-1 tbsp maple syrup
-1 tbsp nut butter
-optional: 1 serving vegan protein powder (I used @nuzest)
In a jar, combine all the ingredients and let set in the fridge for 3+ hours. Mix again before serving & enjoy!

Topped with yogurt & berries these pancakes are an easy, delicious breakfast to fuel your mornings — here’s the recipe:
-3/4 cup flour
-1 tbsp coconut sugar
-1 1/2 tsp matcha powder (I used @naoki_matcha)
-1 tsp baking powder
-1 tbsp nut butter
-1/2 cup applesauce (or 1 mashed banana)
-1/2 cup plant-based milk
In a bowl, mix the nut butter, applesauce, and milk. Sift in the remaining (dry) ingredients, then whisk until combined. Let the batter sit for 5 minutes. Meanwhile, heat a greased frying pan on medium-low heat. Spoon batter onto the pan; once bubbles appear, flip and cook until both sides are golden brown.

這次要介紹日本的調味料味醂。味醂是調味酒的一種,甜中帶酒香,有助去腥膻,做略帶甜味的菜式如洋蔥牛肉飯、西京燒、照燒雞腿等都特別適合!味醂甜度是糖的三分之一,平日做中西式料理也可以用味醂代替部份的糖,既健康又能令味道層次更豐富!

雞蛋 3隻
紫菜1塊
鰻魚1/4條

調味料:
砂糖 1茶匙
甜醬油 1茶匙
味醂 1茶匙
鹽 少許
.
【1】雞蛋打散,加入所有調味料拌勻。
【2】用中小火燒熱平底鑊,加入約1/3的蛋液,煎至半熟後放上紫菜和鰻魚。
【3】平底鑊微微傾前,用木鏟翻蛋皮並將蛋皮捲起。
【4】餘下的蛋液分兩次煎熟捲好。最後玉子燒兩面各煎30秒定型。

📝此食譜的玉子燒只帶少許甜味,大家可以自行加減糖的份量。
📝玉子燒只捲三層,可讓雞蛋保持嫩滑,如果喜歡較有口感的,可以多分幾次煎。
📝加了味醂及糖的玉子燒容易焦,所以用小火就好了。
📝加入2湯匙的高湯或鰹魚汁,口感會更鬆軟,但比較難捲,多做幾次可以挑戰一下。

First time trying a #veganbiscuit with a sausage patty and cheese.  Overall it came out pretty good.  I wasn't quite content with the cheese but that was the first try. Avocado Sushi 🥑 A super tasty & easy to prepare snack. Tag a friend 💚 who'd help you finish this plate!

Ingredients
1 1/4 cups water⠀
1 cup uncooked glutinous white rice (sushi rice)⠀
3 tablespoons rice vinegar⠀
1 pinch salt ⠀
4 sheets nori (dry seaweed)⠀
1/2 cucumber, sliced into thin strips⠀
1 avocado - peeled, pitted and sliced⠀
⠀
Directions⠀
Combine the water and rice in a saucepan and bring to a boil. Cover, reduce heat to low and simmer for 20 minutes, or until rice is tender and water has been absorbed. Remove from the heat and stir in the vinegar and a pinch of salt. Set aside to cool.⠀
Cover a bamboo sushi mat with plastic wrap to keep the rice from sticking. Place a sheet of seaweed over the plastic. Use your hands to spread the rice evenly onto the sheet, leaving about 1/2 inch of seaweed empty at the bottom. Arrange strips of cucumber, avocado or both across the center of the rice. Lift the mat and roll over the vegetables once and press down. Unroll, then roll again towards the exposed end of the seaweed sheet to make a long roll. You may moisten with a little water to help seal. Set aside and continue with remaining nori sheets, rice and fillings.⠀
Use a sharp wet knife to slice the rolls into 5 or 6 slices. Serve cut side up with your favorite sushi condiments. Enjoy!

there were many staples in my household growing up: pasta & meatballs, sausage & peppers, fritatta,etc. one I looked forward to most was my moms stuffed peppers🤤 idk if these are considered an Italian thing?? I feel like people from all walks of life make em & everyone makes them a little different from the last. there really is no “wrong” way of making them. served with rice on the side, inside, vegetables in the pan, topped with sauce, topped with cheese, close with the pepper top that you cut off, sitting in a wine/broth juice. & then you have the ones that are REALLY different: tex mex, asian, people are creative man. my mom always served rice on the side & had them cook over a bed of veg, chillin in wine/broth/herbs. I did similar vibe except used her “marinara” sauce I guess you can say, in addition to all the other fun stuff AND smeared goat cheese over the crispy tops to give that creamy edge😜
pep mixture:
1 lb organic ground turkey
1 @vitalfarms egg
handful parsley, chopped
1 medium onion, chopped fine
3 garlic cloves, minced
6tbs @bobsredmill almond flour + enough nut milk to create “damp sand”
2tbs nooch (nutritional yeast; optional but adds cheesy background)
for the pan:
2cups marinara sauce (used my moms, use your fav!)
1cup @bonafideprovisions chicken bone broth
1/4cup white wine
2-3bell peppers, halved, seeds out, cored, top taken off
handful mushrooms, sliced
1 zucchini, large dice
2-3 celery stalks, large dice
handful baby carrots, halved
1 small onion, large dice
1 garlic clove, smashed
1 bay leaf
preheat oven to 375. whisk egg in a small bowl & add to rest of pepper mixture, combining until everything is incorporated. spoon mix in halved peppers, filling empty cavity. pour marinara, wine & broth in a large baking dish (around 13X9) whisking to combine. toss in all chopped veg+rest of pan ingredients, toss, snuggle in stuffed peppers. cover with layer of parchment paper then layer of foil, baking for 40 mins. remove all covering & bake for 20 more mins uncovered, broiling the last 2 mins. & the goat cheese!! smear that goat cheese & watch it melt before your eyes👅

Try serving roasted crispy balsamic glaze brussel sprouts at your next gathering 😋 these were too delicious. ⬇️ .

Wash and slice brussel sprouts in half (however many you want to serve). Lay on a sheet pan with sliced red onion and drizzle with olive oil and bake at 400 degrees F for 20 minutes. Stir them around and season with garlic, pepper, salt, and drizzle with a balsamic glaze. Put back in the oven for 10 minutes (or until tender and crispy). Serve and enjoy immediately!

Jordan’s childhood & comfort food: Thai basil chicken | Serves 2-3

HOW TO:
1. Combine peeled garlic, chilies (de-seed them if you don’t like spicy), and shallot together in a pestle and mortar. Smash until a paste forms. 
2. Pluck a handful of holy basil leaves and roughly cut them.
3. Cut chicken into bite-sized pieces and salt them
4. Heat oil in a pan over medium-high heat and stir-fry the paste until fragrant (about 2-3 mins). 5. Toss in chicken & dark soy sauce and cook until browned and done. 
6. Add in soy sauce and fish sauce. Stir until sauces are well-incorporated. Add pepper to taste.
7. Fold in basil leaves for 5-10 seconds and remove from heat. SERVE and DROOL FREELY 🤤

🌶 I struggled my way through eating this (but I’m also not THE best with spicy). So if you are not good with heat, 2 chilies are probably plenty.
⭐️ You can use Indonesian sweet soy sauce (kecap manis) as an alternative for dark soy sauce. You can find it in H-Mart!

I don’t know when I will accidentally whip out something so beautiful and tasty as this, so I will have my moment. I started with wanting to make a tanDai but ended up making something that looks like a marriage of sweets none of which I know how to make individually. It has the kick and the punch of gasa-gase payasa (khus khus kheer), the flavours of kulfi/tanDai without rose, the form of a basundi and the texture of a baadushah (swipe to see a closeup). How I made the really thick kheer: Soaked almonds, cashews, pista, pecan, poppy seeds for 4 hours. Ground them to a fine paste with some water. Brought a litre milk to a boil, added 6 spoons of sugar and 4 whole cardamom and let it simmer for 15 mins, scraping the cream from the vessel every now and then. I then added the ground paste, adjusted sugar to taste and let it simmer for another 10 minutes. In the meanwhile I made some fresh elaichi powder. The consistency was a beaten up kulfi thickness (sorry, am moving my arms animatedly here but you cannot see me.)
For the pastry/biscuit: I used a recipe that @sanguu had shared with me when she made vegan baadushah. 1 cup plain flour, 1/2 tsp baking powder, 2.5 tbsp butter/ vegan butter, 1/4 cup water. I made small patties and poked them with a fork so they can absorb some kheer when dunked (just nice coz these babies fluff like crazy). Instead of frying, I just baked them. They were flaky and neither too crunchy nor soft. 
The rest that they say is history: Once the pastry cooled, I dunked them in and let sit for a couple of hours and sprinkled the fresh cardamom powder and garnished with crushed pistachios. The kheer is not absorbed but softens the outer pastry. The world is indeed perfect when you bite into the pastry and scoop some of that kheer goodness in. Happy Holi everyone ❤️
PS. An almond milk version would make this vegan. I do not like almond milk so I stuck to regular milk.

Soupy rice with tofu and greens 
Celebrating the first day of spring with this beautiful, vibrant bowl of soupy rice. Ridiculously easy to whip up, loaded with leafy greens and fresh ginger, perfect for a light meal. I had a soup similar to this, years ago in a food court in Singapore. It was the only vegetarian item on their menu, delicious, but the chef had added a lot of mushrooms and I don’t like mushrooms (I know I know, it is shocking to some of you) 
Here’s my take on the Singaporean soupy rice 👇🏼

Ingredients 
1 cup partially cooked jasmine rice (cooked about 3/4th of the way)
4 cups vegetable broth
1 tbsp fresh grated ginger
1 large book choy, chopped 
2 stalks of Swiss chard, chopped 
2 green onions, chopped 
1/2 cup cubed tofu
Fresh ground pepper, to taste 
2 tbsp tamari
Salt, to taste 
1 tbsp or more of ginger-chili oil (recipe below)
1 tsp sesame oil .

Heat a large pot (low heat) and the sesame oil and then the cubed tofu. Gently sauté for 3 minutes and then add the green onions. Add some salt and sauté for 2-3 minutes. Gently add 4 cups of veggie broth and grated ginger, tamari and bring to a boil. 
Reduce heat, add the Swiss chard, bok choy, scallions and cook for 2 minutes. 
Add freshly ground pepper, the cooked jasmine rice and stir. Simmer for 5 minutes on medium-low heat. 
Add ginger-chili oil and serve immediately

Recipe for ginger-chili oil:
1/2 cup sesame oil
1 teaspoon chili flakes
1/2 inch piece ginger, grated
.

Heat sesame oil in a small bowl (medium heat)
Add the chili flakes.
Add the grated ginger
Cook until the oil starts to sizzle. (The oil should be warm but not hot.)
Turn off the heat.

Hiya everyone 👋🏼 I participated in @ripplefoods #ripplefoodie challenge to make a super easy & delish breakfast using oats, nut butter, and ginger ✨ My go-to breakfast is always just a bowl of porridge, and so I wanted to make a combination that was just as yummy using these amazing ingredients hehe - and @ripplefoods milk, of course 😛 I just combined 1/2 cup oats + 1 cup Ripple unsweetened pea milk + 2 Tbsp peanut butter + 2 Tbsp maple syrup + 1/4 tsp ground ginger. Meal prep for that carb intake.
Let’s talk carbs - Carbohydrates are all about ENERGY and are found in foods like fruits, vegetables, breads and pasta.
Your body uses these foods to make glucose, which is your body's main energy source. Glucose is a type of sugar that can be used right away for energy or stored away to be used later. Essential if you are a active person and building muscle.
Carbohydrates can help boost your mood, aid in weight loss, they are good for your heart function and keep your memory sharp!
Don’t hate the carbs, they play an important roll in your diet 🙌🏼✨
.
This makes 6 servings -
* 800g penne pasta - check labels for ingredients
* 600g cherry tomatoes, halved
* 650g button mushrooms, sliced
* 1 large head of broccoli cut into florets
* Big handful of fresh basil, chopped
.
Pesto sauce -
* 3 cups packed fresh basil (large stems removed)
* 4 Tbsp pine nuts or walnuts (if nut-free, try sunflower seeds!)
* 4 large cloves garlic (peeled)
* 3 Tbsp lemon juice
* 4-5 Tbsp nutritional yeast
* 1/2 tsp sea salt (plus more to taste)
* 3-4 Tbsp extra virgin olive oil
* 4-8 Tbsp water (plus more as needed)
.
1. Make the pesto sauce in a blender, set aside.
2. Boil a large pot of water with a pinch of salt. Once the water is boiling, add all the pasta and turn to a lower heat.
3. Then chop up the tomatoes, button mushrooms, broccoli and basil.
4. Heat up a large fry pan with a small amount of olive oil. Add the tomatoes and mushrooms until lightly brown and soft.
5. At this stage the pasta should be al dente. Drain the pasta well, rinse with cold water so it stops cooking completely. Pour back into the pot.
6. Add the mushrooms and tomatoes into the pot with the pasta. Then add the basil, pesto sauce and broccoli. 
7. Mix well over a low heat until heated through. I add the broccoli in raw as I like it crunchy! If you want softer broccoli then boil it in some water while your cooking the pasta.
8. Ready to serve! You can add any ingredients to this recipe. Sometimes I add corn kernels, pine nuts and peas!

* 4 large cloves garlic (peeled)
* 3 Tbsp lemon juice
* 4-5 Tbsp nutritional yeast
* 1/2 tsp sea salt (plus more to taste)
* 3-4 Tbsp extra virgin olive oil
* 4-8 Tbsp water (plus more as needed)

1. Make the pesto sauce in a blender, set aside.
2. Boil a large pot of water with a pinch of salt. Once the water is boiling, add all the pasta and turn to a lower heat.
3. Then chop up the tomatoes, button mushrooms, broccoli and basil.
4. Heat up a large fry pan with a small amount of olive oil. Add the tomatoes and mushrooms until lightly brown and soft.
5. At this stage the pasta should be al dente. Drain the pasta well, rinse with cold water so it stops cooking completely. Pour back into the pot.
6. Add the mushrooms and tomatoes into the pot with the pasta. Then add the basil, pesto sauce and broccoli.
7. Mix well over a low heat until heated through. I add the broccoli in raw as I like it crunchy! If you want softer broccoli then boil it in some water while your cooking the pasta.
8. Ready to serve! You can add any ingredients to this recipe. Sometimes I add corn kernels, pine nuts and peas!
