First run in nearly a week today and I feel so much better! The issue I was having was a tight hamstring that was feeding into some knee pain but with some massage and a few exercises to do from now on it should be all good 💪💪💪 I was able to run at a steady pace for the whole run but did not try to push it beyond 5 miles as I don't want to aggravate it. The signs are good though! 6 weeks to go and I can't wait, looking forward to upping the miles @mkmarathon @shinfieldrunners 💪🏃🏋️

At work today so lunch is a #yellowsticker @eatforestfoods Moroccan bean wrap and a new strawberry coconut yoghurt from @lidlgb!
Wasn’t a huge fan of the wrap which is a shame as I usually love the forest food products! But I didn’t warm it up and I’m not generally a fan of Moroccan spices (apart from falafels) so I guess that’s on me 🤷🏻‍♂️
Yoghurt was fantastic and I highly recommend that everyone goes out and tries them! 💚

Zucchini Nice Cream❤❤❤ This was so good and creamy!!
I used 2 frozen, peeled and chopped zucchinis and one frozen banana, a tbsp of beet powder, pinch of stevia and 1 scoop of @purethera vegan protein powder.  I ran this through my vitamix. I have the professional series 500. I started with a level 2 til it looked crumbly and then used the frozen dessert option. These are super filling, delicious & easy to make.
Recipe for 2:
1 and 1/2 cup flour (you can use whole wheat or gluten free flour)
3tbsp brown sugar (or any sweetener of your choice)
1tbsp baking powder 
2tbsp apple cider vinegar 
1tbsp cinnamon
1tbsp vanilla extract
1 and 1/2 cup coconut milk
Mix everything in a blender — add water if needed. 
Topped with maple syrup, strawberries and blueberries ❤👌🏻

Turns out the words “vegan” and “non-toxic” are more than just trending words and there is a reason your skin care products (and all your products) should be both of those things.

Most of us are aware that what we consume significantly affects our health BUT did you know what you put ON your skin is just as important. And just because the bottle says “natural” does not mean it’s safe.

Have you ever really payed close attention to the ingredients in your face wash, moisturizer, foundation, shampoo, etc.? Guys, it only takes 26 SECONDS for anything you smother on your largest organ 👉🏼your skin👈🏼, good or bad, to enter your bloodstream! Think about that. If you have a bunch of toxic, carcinogenic (think non-vegan) ingredients in your skincare, you’re putting a bunch of toxic, carcinogenic crap IN your body as well. Considering the fact that the FDA only bans 11 toxic ingredients from our personal care products (The EU bans 1,400+ and Arbonne bans over 2,000 👈🏼 the reason it’s my brand of choice), chances are your face wash & moisturizer might not be the safest option. I’ll be the first to admit, I never used to care or give any thought to the ingredients in my personal care products. If it “did the job” and smelled like a coconut 🥥 , take my money!!

Turns out the words “vegan” and “non-toxic” are more than just trending words and there is a reason your skin care products (and all your products) should be both of those things.

Most of us are aware that what we consume significantly affects our health BUT did you know what you put ON your skin is just as important. And just because the bottle says “natural” does not mean it’s safe.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Have you ever really payed close attention to the ingredients in your face wash, moisturizer, foundation, shampoo, etc.? Guys, it only takes 26 SECONDS for anything you smother on your largest organ 👉🏼your skin👈🏼, good or bad, to enter your bloodstream! Think about that. If you have a bunch of toxic, carcinogenic (think non-vegan) ingredients in your skincare, you’re putting a bunch of toxic, carcinogenic crap IN your body as well. Considering the fact that the FDA only bans 11 toxic ingredients from our personal care products (The EU bans 1,400+ and Arbonne bans over 2,000 👈🏼 the reason it’s my brand of choice), chances are your face wash & moisturizer might not be the safest option. Jussss sayin’ 🤷🏻‍♀️

Lleva un poco de todo : cebolla, pimiento rojo, tomate, coliflor, champiñones ,guisantes , garbanzos cocidos , arroz (obvio 😂) y especias .

Wrap and bake samosas - Here's a fun weekend project by @thevegansara, samosas! They're made with store bought tortilla making it so much easier to make (yet so delicious). Swipe right 👉🏼 for a video on assembly by @thevegansara :

Ingredients:
4 cups of Yukon gold potatos; diced in 1/3 inch cubes (about 4 medium potatoes)
1 cup frozen peas 
1 tblsp oil
2 tsp mustard seeds
2 tsp cumin seeds
1/2 tsp tumeric
1 tsp chilli powder
1 garlic clove minced
1/2 inch grated ginger
1 tblsp finely chopped cilantro
1/2 tsp of Garam Masala
8 pieces of 10 inch flour tortillas
Flour paste: 3 tbsp flour mixed with equal parts water -
Directions
1) cover potatoes with water in a saucepan, bring to the boil. Reduce to simmer, cook until fork tender. About 8 minutes.
2) Using large frying pan add oil on medium heat. Then add mustard and cumin seeds. Cook until seeds begin to to brown and pop. About 1 minute.
3) Add garlic, ginger, tumeric and chilli powder. Stir for 2 minutes.
4) Drain and add potatoes to pan, cook for 5 minutes, stirring frequently. Add peas halfway through.
5) Mash potatoes a bit, you don't want the pieces too big, but you don't want them too small. Add salt, cilantro, and Garam Masala, mix and let it cool.
6) Cut tortilla in half. Take one of the halves, place the straight edge closest to you. Take the left corner and bring it up to the top of the crescent so it forms a triangle. (swipe to the right for the video on this)
Take the right corner so it crosses over the first fold and forms an equal sized triangle on top. Use the flour paste seal the edge of the seam. Press firmly. Hold the folded shell upright so it is in the shape of a cone. Add 2 tbsp potato filling to the inside of the cone. Then seal the top of the cone with flour paste. Press firmly to ensure you have a good seal. Repeat.
7) Lightly brush with oil. Bake on parchment lined baking sheet side down at 400 5 for 8 minutes. Flip samosas, bake for another 4 minutes. Enjoy!

Never thought that only a few ingredients can make up such an exceptional bowl #vegupyourlife . I guess mango, spinach, avocado, broccoli, lentils and parsley make up the perfect match. Vitamin C is necessary for the growth, development and repair of body tissues. A recent meta-analysis also showed vitamin C was beneficial to people whose immune system was weakened due to stress.

While vitamin C may not be the cure for the common cold, there is good evidence to support that it helps reduce risk of developing complications when you get sick. Vitamin C itself is also a strong antioxidant that can help boost your blood antioxidant levels which in turn can help reduce risk of chronic disease.

If that’s not motivation enough to get in more Vitamin C, the American Journal of Clinical Nutrition found that those with the highest concentrations of vitamin C in their blood were associated with 42% lower stroke risk.

So don’t neglect this helpful vitamin and remember supplementation is always a great option too.

For more background info, one small orange has 51.1mg vitamin C and a medium orange has 69.7mg vitamin C. The minimum requirement for adults is about 75-90mg a day (but studies show up to 500mg a day to be beneficial).

I got some beautiful deep purples this morning! I've been doing less bowls the last couple days due to increasing my juices for enhancing my detoxification with herbs right now. I'm going slow but I'll be doing every other day bowls for awhile now. Juices every morning and lymphatic herbs. Been getting good movement I can feel!
So this morning I have a beet juice and mango kumquat blueberry bowl. 
Beet juice:
3 carrots
2 beets
1 lemon 
2 apples
1" piece ginger

Mango/kumquat/blueberry bowl:
1 cup frozen mango
10 kumquats
1/2 cup frozen blueberries
2 bananas
1 Tbsp dragon fruit powder
Blend and top with bananas, granola and goji berries. ❤️✌️😋

This @foursigmatic mushroom cacao mix just might be my new favorite hot cocoa.  Used oat milk instead of water and it was perfect!  Not too sweet (but sweet enough) and the oat milk gave it the creaminess I love in a traditional hot cocoa!

For the Oil Free Spicy Peanut Sauce:
1/2 cup creamy all natural peanut butter 
1/2 cup to 3/4’s cup of water depending on how thick or thin you like it 
1-2 tablespoons pure maple syrup 
2 tablespoons tamari 
1 tablespoon apple cider vinegar 
1/2 lime juiced
1 inch fresh ginger grated
1-2 cloves garlic
1 tbsp sriracha 
2 teaspoons fresh cilantro

How to make:
Add all ingredients to a high speed blender and process until smooth. Enjoy!

Hi friends! I know I’ve been a bit absent, but it’s because I have just been feeling so run down in a lot of ways, and I decided I need less screen time right now to take care of myself. I have been spending a lot of time dangling things in front of my cats, which I think should be the new “it” thing in wellness. Thoughts? 💚

Also I have been making lots of super fast & simple meals like this one. 🌱 In my bowl: lentil macaroni pasta (made from 100% lentil flour) & cooked peas tossed with vegan butter (I used Miyoko’s) & some leftover asparagus that was sautéed with some veggie broth. Then lots of fresh pepper. 🌱 This reminds me of something I used to eat as a kid, except back then I don’t think I would have touched the asparagus! 😂

Ingredients
Makes 6
1 cup plain flour (or flour of choice)
1/2 cup granulated natural sweetener (raw sugar, coconut sugar)
1 tsp baking powder
1/4 tsp baking soda (bicarbonate)
1/4 tsp salt
1 tsp vanilla extract
75g blueberries
3/4 cup soy milk
1/2 tsp apple cider vinegar 
How To Make:
Preheat oven to 180C
Mix milk and vinegar and allow to stand for 5 mins to turn into buttermilk
Mix dry ingredients, mix wet ingredients 
Add wet to try dry and stir until just mixed
Add blueberries and stir through
Spoon into 6 muffin cases (I used silicon)
Bake for 20-25mins until lightly golden and a skewer comes out clean.
Enjoy!

Recipe:
Ingredients
1 head of cauliflower, washed, dried, and broken into florets⁣⁣
1 cup wheat flour (or GF all purpose flour)⁣⁣
3/4 cup water⁣⁣
2 cloves garlic, pressed or minced⁣⁣
1/4 tsp sea salt⁣⁣
pinch of red pepper flakes⁣⁣
1 cup bread crumbs of choice (I made my own from bread I had on hand and lightly toasted)⁣⁣
1/4 cup maple syrup⁣⁣
2 tbs coconut aminos⁣⁣
1 tsp rice vinegar⁣⁣
1/2 tsp sesame seeds⁣⁣
1/2 tsp ground ginger⁣⁣
1/4 tsp ground pepper⁣⁣
scallions, chopped, to garnish⁣⁣
extra sesame seeds, to garnish⁣⁣
volcano rice, cooked according to directions⁣⁣
1/2 avocado, sliced⁣⁣
1 cup organic edamame, cooked and shelled⁣⁣
⁣⁣
How To Make:
Preheat oven to 450 degrees.  Line a baking sheet with parchment paper.  Whisk together flour, water, garlic, salt, and red pepper flakes in a small bowl.  Place bread crumbs in a separate bowl.  Dip each cauliflower floret in the flour mixture (shaking off excess) followed by the breadcrumbs and place on parchment lined baking sheet.  Bake for 25 minutes.  Meanwhile, combine maple syrup, liquid aminos, rice vinegar, sesame seeds, pepper, and ginger in a small bowl.  Remove wings from oven and brush on sauce.  Flip and brush the other side.  Return to oven and continue baking 5 minutes more.  Top with scallions and additional sesame seeds.  Enjoy with rice, edamame, and avocado!
