Maqluba, a Palestinian dish whose name means 'upside down' in Arabic, has become a favourite dish in our home. I didn't grow up eating this as it doesn't feature in Egyptian cuisine, but it packs all of the flavours I grew up loving into one pot that's flipped upside down. This is my version. Stewed goat meat and roasted eggplant layered with rice and cooked together in the spiced goat broth, studded with buttery pine nuts. And yes, it collapsed. We ate it drenched with yogurt with a Middle Eastern salad on the side. Yes please.
